For 2 servings Ingredients include 4 ounces of whole –wheat penne, 8 ounces of smoked pork sausage, 12 ounces of frozen vegetables, 2 tablespoons of olive oil, 1/3 cup heavy cream, a teaspoon of creole mustard, kosher salt and pepper to taste.
Chickpeas, kales and sausage with oven-baked egg
The meal is perfect for one person dinner but can be prepared for a family without adding so much time. The eggs can be baked on top of the toaster oven so no need for preheating.
Ingredients include ½ large yellow, chopped onion, 1 tbsp. Olive oil, salt, ½ bunch of kale, 1 ½ cooked chickpeas, 2 large eggs and ½ spicy fresh sausage.

For 4 servings ingredients include; ½ cup chopped fresh cilantro, 1 tbsp. Lime juice, 1 cup of water, ¼ Thai green curry paste, 4 salmon fillets, I tsp. Light brown sugar, 3 scallions, 2 cups of snow peas and 1 can of unsweetened coconut milk.
